A Pancake Tip

So it’s not rocket science, but sometimes when I make pancakes I make extra and freeze them in ziploc baggies for later in the week when we need a quick breakfast. Astounding. I know.

So I make a double portion of batter with my Pioneer baking mix, some milk and some buttermilk and then whatever we don’t eat, I freeze in the freezer. They can be popped in the toaster like storebought frozen pancakes, only they don’t taste like cardboard and freezerburn. (If they’re thick they may need to be toasted twice to get heated through.)

I’m not sure exactly how long they’ll last in there, because, well, around here they usually don’t last more than a few days before they’re eaten. :)

I was just wondering about freezing pancakes and wondering how to reheat them well without them going soggy. Thanks for the post, I’m going to try it!

Great idea! I love it. I didn’t think about putting them in the toaster.

French toast is another breakfast goodie that freezes beautifully! I can see what you mean about the pancakes. I’ll freeze those, or waffles, or French toast and it last all of about 2 days, LOL!! I guess that means we’re doing something right!

I like to microwave mine in the bag that I froze them in since I make Texas size (same size as my skillet) pancakes so that when I make them I can make just one per person and cut it up with the pizza cutter. Maybe I should start making them smaller so that I can control my portions better… :D
